Com a finalidade de avaliar a qualidade da bebida do café (Coffea arabica L.), foram determinados os teores de açúcares totais, sacarose e proteína, de cafés previamente classificados pela prova de xícara, como bebida "dura", "rio", "riada" e "blends. Os grãos foram submetidos à torração média e moagem comercial. Foi concluído que: a) a bebida rio da cooperativa 1 e as bebidas dura e o blend (dura + rio) da cooperativa 2 destacaram-se pelos elevados teores de açúcares totais; b) a bebida rio da cooperativa 1e a bebida dura da cooperativa 2 apresentaram maiores teores de sacarose; c) a cooperativa 2 se destacou com maiores teores de açúcares totais e sacarose em todos os padrões de bebida estudados; d) o blend (dura + rio) da cooperativa 1 foi que apresentou um menor teor de proteína, enquanto que as bebidas dura, e os dois blends (dura + rio e dura + riada) da cooperativa 2 destacaram-se com maiores teores.
With the purpose of evaluating the quality of the coffee drink (Arabic coffea L.), they were certain the tenors of total sugars, sucrose and protein, of coffees previously classified by cup proof, as drink "hard", "river", "riada" and "blends". The grains were submitted to the medium roasting and commercial grinding. It was ended that: a) the drink river of the cooperative 1 and the hard drinks and the blend (hard + river) of the cooperative 2 they stood out for the high tenors of total sugars; b) the drink river of the cooperative 1 and the drink hard of the cooperative 2 they presented larger sucrose tenors; c) the cooperative 2 stood out with larger tenors of total sugars and sucrose in all the drink patterns studied; d) the blend (hard + river) of the cooperative 1 it was that presented a smaller protein tenor, while the hard drinks, and the two blends (hard + river and hard + riada) of the cooperative 2 they stood out with larger tenors.
